Tess’ Tasty Potato Salad

Now, this isn’t just any ordinary potato salad – it’s got a kick!  And a flavor that leaves everyone wanting more.  I first discovered this recipe in a bbq restaurant and instantly fell in love with it.  I made it my life long goal to recreate the tasty concoction and am going to share it with all of you!

   Tess’s Tasty Potato Salad

  • 3 1/2 lbs. red potatoes
  • 1 tsp. garlic powder
  • 1 tsp. black pepper
  • 1 tsp. dry parsley
  • 1 tsp. salt
  • 1 tsp. sugar
  • 1 tsp. dry ranch dressing
  • 1/3 c. chives
  • 1/2 c. green onions
  • 1 c. bacon, chopped
  • 2 c. sour cream
  • 2 c. mayo
  • splash of white vinegar

1. Bake (for medium size should take about an hour).

2.  Let cool slightly then cut into cubes or slice and add to a large bowl.

3.  In bowl, mix in spices one at a time.

4. Add bacon, onion and chives, mix again.

5.  In a separate bowl, mix sour cream, mayo and splash of vinegar and then add to the larger bowl.

6. Cover and refrigerate.  THE LONGER THE BETTER!
