This warm and hearty bean soup so filling it can feed an army!

It’s also versatile enough for you to add other ingredients such as carrots, wheat berries, spice it up with peppers – the skies the limit with this basic soup recipe.

Lucky Bean Soup Recipe

  • 1 lb. Bean Soup Mix
  • 1 16 oz. canned tomatoes
  • 1 medium onion, chopped
  • 1/2 c. bell pepper, chopped
  • 1/2 c. celery, chopped
  • 1-2 garlic cloves
  • 1 tbls. chili powder
  • 1/2 tsp. cumin
  • 1 lb.  sausage or ham
  • salt and pepper to taste

1. Wash beans and cover with water to soak overnight or at least 12 hours.  Drain.

2. Add all ingredients except sausage.  Cover with water (about 10-12 cups) and bring to a boil.

3. Reduce heat and simmer 1 – 2 hours until beans are tender.  Add sausage or ham and cook until sausage flavor is well blended into the beans.
