Pancake Mix in a Jar

It’s very convenient to have some “just add water” meals around for a rainy day. I can’t tell you how many times this mix has saved me in the mornings. All you need to do is add a few wet ingredients and viola – you’ve got fresh pancakes.

As an added bonus, I have also used this recipe to make waffles with. Enjoy!

Pancake Mix in a Jar

Makes 12 Servings

  • 5 cups unbleached flour
  • 1 1/4 cups powdered milk
  • 1/4 cup white sugar
  • 1/4 cup baking powder
  • 1 tablespoon salt
  • 1/8 tsp. grated orange rind, optional

Tip: For cinnamon pancakes, add 2 tablespoons cinnamon to mixture.

Combine all of the ingredients in a mixing bowl. Use a whisk to incorporate the ingredients evenly. Store mixture in an airtight container and use within 8 months.

To make pancakes or waffles: 2 cups pancake mix 1 cup water, 1 egg, 2 tablespoons oil (for waffles, use 3 tablespoons). Beat smooth with a wire whisk or fork. This makes eight 4-inch pancakes or 4 large waffles.
