There is no need to shell out big bucks for the store-bought version of this healthy snack when more than likely you have all the ingredients sitting in your pantry. I whipped this up in 10 minutes using ingredients I had on hand. While it baked I got to sit on my couch and relax.
The secret to crunchy granola is after it is finished baking, allow it to sit out overnight to crisp and dry out.
Don’t feel handcuffed to these ingredients, feel free to use your favorite seeds, nuts and berries to change the recipe up. This yummy snack is a great addition to hikes or for an afternoon snack, but I prefer it for my morning cereal.
Crunchy Cran-Delight Granola
- 4 c. quick oats
- 1 c. walnuts, chopped
- 1 c. cashews, chopped
- 1/2 c. raw pumpkin seeds
- 1 c. dried cranberries
- 1 c. dried apples, chopped
- 1/2 c. unsweetened coconut flakes
- 1/2 c. brown sugar
- 3/4 c. honey
- 1 c. coconut oil
- 1 tbls. cinnamon
- 1 tbls. vanilla extract
- 1 tsp. sea salt
- Combine all ingredients and cook at 200 degrees F for 45 minutes.
You can also go the extra mile and use your abundance of granola to make granola bars. Best of all, this recipe requires no baking.
